Take, for example, 2021 Pinot Gris from Haywire’s Switchback Vineyard by winemakers Matt and Kat D’Costa: Find spring-like freshness full of citrus and tree fruit notes such as pear and nectarine ready to drink without decanting. It was whole cluster pressed and fermented naturally then aged in concrete tanks. The 11 months on lees with constant stirring resulted in a complex wine with fine structure and texture. Drink now with roast poultry, especially duck a l’orange, pasta or salmon dishes, or cellar carefully for future reward.
