Sleek, Shiny, Sexy, Evolve Sparkling House Opens in Penticton

After months of transforming the property on its stunning setting just above the Kettle Valley Rail (KVR) trail in Penticton on the beginning of the famed Naramata Bench, the team at Evolve Sparkling House popped open the doors for a soft opening.

The inviting design of the tasting facility is sleek, shiny, and sexy, and as you step through the portal from the parking lot, you are captivated by the Okanagan Lake views that await. The clean modern lines with highlights of pink and champagne tones are carried throughout from the tiered patios, tasting room, to the wine club lounge on the upper level.

Evolve Sparkling House joins the family-owned portfolio of TIME Family of Wines, the urban Chronos Winery and Tasting Room found in downtown Penticton complete with  OROLO Restaurant + Cocktail Bar, highly regarded for its dry-aged steaks, creative cuisine and cocktails.


It is truly a unique addition with its portfolio rooted in Methode Traditionnelle techniques in small-batch production and it launches with five carefully crafted sparkling wines and will expand to eight as new cuvées debut throughout the year. Given the property sits at the same latitude as France’s iconic Champagne region, the team is confident that the Okanagan Valley provides ideal conditions for growing traditional sparkling varieties.

Named ‘Best Sparkling Wine in Canada’
The vision for such traditional sparkling wines has already been reinforced by the impressive accolades already received. At the 2025 All Canadian Wine Championships, Evolve Brut Nature 2018 earned Double Gold and was named Best Sparkling Wine of the Year. It also achieved Gold at the 2025 WineAlign National Wine Awards of Canada.

Brut Première 2020 was awarded a Silver Medal and 90 Points at the 2025 International Wine & Spirits Competition, London, and a Silver Medal at the 2025 WineAlign National Wine Awards of Canada.

Brut Rosé 2018 achieved a Gold Medal at the 2025 All Canadian Wine Championships.

Winemaker Lynzee Schatz is considered a rising star in sparkling wine. She returned home to the Okanagan after honing her sparkling craft at Chandon for five years in the Yarra Valley, Australia. Says Lynzee: “Sparkling wine has been my passion since I entered the wine industry over 20 years ago. Being awarded as Canada’s Best Sparkling Wine of the Year and receiving an international award for a wine that stood shoulder-to-shoulder with Champagnes and some of the world’s best sparkling wines is incredibly special.”

While three still wines were available, we let the sparkling wines be our focus for our inaugural visit. We tasted through the five currently available including the Evolve Pink Effervescence; Evolve White Effervescence; 2018 Evolve Brut Nature; 2018 Evolve Brut Rosé; and 2020 Evolve Brut Premiere. Each one was expertly crafted and offered a delicious expression.

Sip by sip, it was testament to the actualization of their goal to create BC bubbles as “approachable, expressive, and unmistakably world-class”.

Food and Tastings Program
Food options are available although the key feature at Evolve is the sparkling wine. Chef Bruno Terroso, OROLO, has developed a short and delightful list and we opted to try the Oysters. These were some of the finest oysters we’ve tasted in Penticton and were served freshly shucked on the half shell with a basil and chili mignonette with shaved peach. We will return to enjoy more of them as well as sample the other options.

Evolve premieres with three packages of tasting you can reserve. SPLASH + DASH ($13) is a quick joy-filled tasting of 30 minutes where three handpicked house favourites are presented. FLIGHT MODE ($25) is a 45-minute seated tasting of a curated flight of four wines. BUBBLES + BITES ($55) is a one-hour guided journey featuring five wines, each paired with an artful amuse-bouche.


Simple, elegant, and open daily 12 noon to 6 pm to start, the Evolve food and tastings program will ‘evolve’ over time so be sure to check its website for the latest news.

Whatever way you plan to delve into these delicious wines – with or without food – you won’t be disappointed. And that simmering view of Okanagan Lake with hoodoos in the foreground with Penticton and Summerland in the background comes with every visit!

Co-founders Ron and Shelley Mayert are BC proud and bring a deep connection to the region. Ron was born and raised in Summerland while Shelley grew up on a farm in the Fraser Valley. He attributes their strong BC roots, the region’s potential to grow world-class fruit, and their desire to give back to the communities that shaped their lives as the driving force behind their winery concept.
